both ends on this thing are 7/8-14 thread, so does that mean it'll mate up with standard JIC fittings on either side?

Correct on both counts. The male end is a JIC SAE 37-degree flare and the female end is a JIC swivel 37-degree flare, both at 7/8-14 thread size and built to SAE J514. So yes, either side will connect to standard JIC 37-degree flare fittings at that thread size without any adapter in between.
