fitting's got a female NPTF on one end and a female JIC swivel on the other -- just want to make sure I'm reading that right before I order a handful of these

You're reading it right. One end is a 1/4-18 female NPTF thread built to SAE J476, and the other is a 5/16-24 female JIC swivel with a 37-degree flare conforming to SAE J514. Both ends are female, so keep that in mind when you're planning your connections on each side.

trying to swap a fitting out, is this one female 1/4-18 nptf on one side and a 5/16-24 jic swivel on the other?

On the pipe-thread end, you get a female NPTF 1/4-18 thread built to SAE J476. The other end is a 5/16-24 female JIC swivel with a 37 degree flare, made to SAE J514.
