Is this adapter okay to use with hydraulic lines, or is it just for instrumentation?

what kind of connection does this adapter go between, like is one end pipe thread and the other end for a hose or tube?

One end is NPTF male thread, sized at 3/8 inch, and the other end is a female fitting sized the same that accepts a line, hose, or tube. So yeah, it bridges a pipe-threaded port on one side to a hose or tube connection on the other. That 0.625 inch hex on the female end gives you a wrench flat to hold it steady during installation.
