So this thing is steel, but will it hold up to hydraulic fluid without rusting all over the place?

The AISI/SAE 12L14 carbon steel construction, combined with the Weathercote finish, offers excellent resistance to nonflammable hydraulic fluids. You shouldn't see any rust issues related to typical hydraulic fluid exposure.

does this fitting work with stainless steel tubing or is it only good for regular steel?

Stainless steel tubing is on the approved list for this fitting, along with aluminum, hard or half hard copper, standard steel, and extra heavy wall tubing. One thing worth noting is that extra heavy wall tubing is specifically called out as a good match because the flareless design handles materials that can't be flared. So if you're running stainless in a high-pressure setup, this union should suit you fine.
