Will this nut work with steel tubing?

Yes, this fitting is designed for use with steel tubing, as well as aluminum, copper, stainless steel, and extra heavy wall tubing that can't be flared.

what kind of tubing does this nut work with? got some stainless and also some extra heavy wall stuff that cant be flared

Stainless steel is on the approved list, and so is extra heavy wall tubing that can't be flared. It also works with aluminum, steel, and hard or half hard copper. The whole point of the Ermeto flareless design is that you skip the flaring step entirely, so those heavier wall materials that won't cooperate with a flare tool aren't a problem here.
