Will this brass fitting hold up okay if I'm running it outside on some farm equipment? Gets pretty cold here in the winter.

It's designed to handle temperatures as low as -40 degrees, so it should be fine even in harsh winter conditions. The Dura-Kote plating also gives it good corrosion resistance.
