seal material on this valve, is it buna-n standard or do I need to spec something different when I order?

Buna-N is what comes standard on this valve. For most hydraulic fluid applications that's going to hold up just fine. If your system runs something aggressive like phosphate ester fluid, you'd be looking at a different seal configuration, but for general petroleum-based hydraulic oil service, the Buna-N seals on this unit are the right fit.

Will this here valve work okay in a machine shop environment, with all the coolant and grime floating around?

Application-wise, this Vickers valve is used in machine tool settings, among others. It's also used in marine and offshore applications, so it should hold up reasonably well.
