flow rate on this one -- is 120 liters per minute the max it'll handle or just a typical rating?

120 litres per minute is the rated flow for this valve. Running right at the rated ceiling on a continuous basis is generally harder on any valve than staying somewhat below it, so if your system is pushing close to that number regularly, it's worth factoring in some headroom when you're sizing things out.
