got a hose with a 3/4 JIC male end, will this adapter match up to it?

The JIC side on this adapter is a 3/4 inch male with a 1-1/16 - 12 UN thread callout, so it matches hoses or ports that take that JIC size.

What thread sizes are we actually dealing with on each end of this fitting?

One end runs a 3/4" JIC male thread, which uses a 1-1/16 - 12 UN callout. The other end is a 1" BSPT male, callout R 1 - 11. So you're looking at two different thread standards on a straight body, no bends or offsets involved.
