Will this fitting handle hydraulic fluid okay, or is it more for like, water lines and stuff?

Manufactured in steel, this fitting is definitely made for hydraulic service and fluids. It's not just for water lines.

Correct on both counts. The male adjustable end and the female swivel end are both G 3/4 - 14, so you're working with the same thread size straight through the elbow. No reducing, no step-up. If your line is running 3/4 BSPP on both sides of the connection point, this fitting keeps everything consistent without any adapter in between.
