fitting's made of stainless steel -- does that mean it's got decent protection against rust and corrosion out in rough conditions?

Stainless steel construction gives it solid baseline corrosion resistance on its own, but this one also has Dura-Kote plating on top of that. That extra coating is specifically there to push corrosion protection further than bare stainless would offer, so for demanding environments it holds up well.
