got a 1-1/2 camlock setup for liquids, is this the piece that slides into the coupler and you flip the arms down?

To couple it, you slide the male adapter into the female coupler and press the cam levers down with normal hand pressure. To uncouple, lift the cam arms and pull the adapter back out.

these cam and groove fittings – are they safe to hook up to an air compressor line, or is that a no-go?

Air service is not an option with these. Cam and groove couplings like this one are strictly for liquid transfer. Using them on compressed air lines is a known safety hazard and goes against the product's rated application. Same goes for steam. If you've got an air line that needs a quick-connect solution, you'd want to look at fittings built specifically for pneumatic service.
