The coupling mechanism is straightforward: with normal hand pressure, the cam levers can be pressed down to couple, and lifting the cam arms will uncouple the adapter. got a big shop compressor setup running 120 psi. will these hold up for the main air lines

Absolutely not. Under no circumstances should you use cam and groove couplings for compressed air or steam service. They are strictly meant for handling liquids.

got a 3" female NPT fitting on my transfer line, this the right coupler to mate up with it?

Female NPT on your line means you'll want a female cam and groove coupler on the coupler side, and that's exactly what this one is. The 3-inch female NPT thread connects directly to your existing NPT fitting. Coupling and uncoupling is all hand pressure, press the cam levers down to lock in, lift the arms to release. The cast-in lugs also let you run a safety pin through once it's coupled, so it won't back off on you mid-transfer.
