Got a Holley 750 double pumper on a big block build and need to run braided line to the carb. This fitting gonna work for that setup?

For a Holley Dual Feed 750, yeah, this is the right piece. It threads into the carb using a 7/8-20 thread and steps up to a -08 Male JIC 37-degree flare on the hose end, so you can run braided AN line straight to it. It's the long straight version, blue anodized aluminum, and it comes with the crush washer already included so you're not hunting one down separate.

got a Holley dual feed carb, 750 style. is this the right fitting to go from my -8 JIC line into the carb?

For a Holley Dual Feed 750 through Dominator 1350 series that uses a 7/8-20 inlet thread, this adapter is made for that job. It has a -08 male JIC 37 degree flare on the line side and the 7/8-20 carb thread on the other, and it comes with crushwasher FBM3516.
