fitting says it works with plastic tubing but do I need any special inserts for that or can I just run the tube straight in?

For plastic tubing, you'll want to use the appropriate inserts. Without them, the compression sleeve can deform softer tubing walls and you won't get a reliable seal. Metal tubing like copper or aluminum can go in without that extra step since the material holds its shape under compression. The inserts are what make this fitting safe and functional for plastic applications.
