fitting says it works with plastic tubing but also lists a temp range for metal -- does the plastic tubing have its own limits i need to worry about?

Metal tubing paired with this fitting handles anywhere from -65F up to 250F without issue. Plastic tubing is a different story. Whatever tubing you're running, its own rated temperature range takes priority. So before you put this on a plastic line, check what that tubing is spec'd for and make sure your system stays within those bounds.
