fitting says it works with plastic, copper, and aluminum tubing, does that mean I don't need to flare the tube ends before putting it together?

No flaring needed at all. You cut the tubing to length, slide the nut and sleeve on, push the tube into the fitting body, lubricate the threads, and tighten it up. The compression sleeve does the sealing work, so there's no extra prep on the tube end required.
