trying to hook up 1/2 inch tubing, is this the right union for plastic or copper?

For a straight union on 0.50 inch tube OD, this fitting is made to work with aluminum, copper, and plastic tubing. It is not recommended for steel tubing.

got some half-inch aluminum tubing I need to union up, will this fitting work for that or do I need something different?

Aluminum tubing is one of the materials this fitting is built around, along with copper and certain plastics. At 0.50 inch tube OD, the sizing lines right up. No flaring required either, which saves a good bit of time on the bench. Just make sure the tubing is fully seated against the fitting shoulder before you run the nut down, and follow the turn count for 3/8 through 1 inch sizes, which is 2-1/4 turns past hand tight. You'll be in good shape.

Does this fitting work with plastic tubing, or do I need a separate insert for that?

For plastic tubing, you'll need to use it alongside the 2030 insert. Without that insert, the fitting is rated for aluminum and copper tubing only. One exception worth noting is that it does not work with Eaton PT230 plastic tubing even with the insert. For metal tubing, no insert is required and the assembly process is straightforward: cut the tube clean, slide the nut and sleeve on, then thread and tighten the nut to the fitting body by hand first before finishing with a wrench.

For connecting two runs of 0.50 inch tube OD, this union is made to work with aluminum tubing (and copper or plastic too). It is a brass compression style, so it seals by tightening the nut and sleeve onto the tube, no flaring needed.
