fitting says it works on plastic, copper, and aluminum tubing, does that mean any of the three or do I need to match it to just one type?

All three materials are supported by this compression fitting. You're not locked into one tubing type. Whether you're running copper, aluminum, or plastic line, the 0.38 inch OD compression design grips and seals across all of them.
