fitting's got a 1/4 NPT on one end and 5/8-18 SAE 45 flare on the other -- does that 45 degree angle on the elbow actually help with tight routing situations or is it more of a connection type thing?

Both, really. The 45 degree bend lets you redirect your line without forcing a sharp turn, which keeps stress off the tubing and makes routing in cramped spaces a whole lot cleaner.
