fitting says it's for -04 hose, does that mean it won't work on anything bigger or is there some wiggle room there?

Sized specifically for -04 hose, and that's a hard fit requirement with reusable fittings like these. The ferrule and stem geometry are built around that hose OD and wall thickness, so trying to run it on a different hose size would either leave you with a loose assembly or one you can't get together at all. Stick with -04 and you'll get the secure, leak-free connection this fitting is built for.
