Will this here fitting hold up in a hydraulic system running around 400 bar? Don't wanna blow nothin' up.

This M30x2 metric tube nut is rated for a maximum dynamic pressure of 420 bar, so it should handle your system just fine, as long as you stay at or below that pressure.
