Running a press setup at 3500 PSI and need to know if this valve can hold up at that pressure without swapping out the subplate we already got on there.

At 3500 PSI you are above the 3000 PSI threshold where the product data flags a required change. Ports P, A, and B are rated up to 4500 PSI, but anything over 3000 PSI requires a steel subplate or manifold. A standard or gray iron subplate will not meet spec at that pressure. If your current subplate is steel, you are fine. If it is not, that swap needs to happen before you run it at those levels.
