Got a 2-inch hydraulic line that needs replacing on a big industrial press setup, will this hose hold up to petroleum-based fluid at around 1400 PSI continuous?

For petroleum-based hydraulic fluid at that pressure, this hose has plenty of headroom. It's rated to 1600 PSI working pressure with a 6400 PSI burst rating, so running at 1400 PSI continuous leaves a solid safety margin. The tube is synthetic rubber, which is compatible with petroleum and water-base hydraulic fluids. Temperature-wise it handles from negative 40 up to 212 degrees Fahrenheit, so general industrial press environments are well within range.

trying to swap out an old 2 inch hydraulic line, is this one actually a 2.00 inch ID and what’s the outside diameter on it

For fit and routing, it’s a 2.00 inch inside diameter hose with a 2.53 inch outside diameter.

hose is rated up to 1600 psi but what's the burst pressure on this thing, trying to make sure we got enough safety margin for our hydraulic press setup
