hose says 250 degrees max continuous -- is that enough for a typical wet exhaust setup on an inboard gas engine?

For most wet exhaust applications on inboard gas engines, 250°F continuous is right in the acceptable range, provided the water injection point is upstream enough to cool the exhaust gases before they reach the hose. That's actually the whole reason Trident specifies installing this far enough downstream from the water injection point -- so temps at the hose location stay within that rated limit. If your system is properly set up with water injection cooling the exhaust before it hits the hose, this EPDM hardwall should handle the job without issue.

trying to snake this through a tight spot, is it stiff like regular exhaust hose or will it bend decent without kinking

For longer bent connections, the heavy-wall hardwall build uses a wire helix between 2-ply reinforcement to give it good flexibility and bend radius while still resisting panting and collapse. The main thing is to avoid damaging or kinking it during the install.
