fitting says 316 stainless -- is that the actual body or just a coating on regular steel?

Full 316 stainless steel construction throughout. It's not a plated or coated carbon steel fitting with stainless appearance. That matters a lot in corrosive or washdown environments where a coating would eventually break down and leave you with rust problems anyway.

got a -4 female JIC EverSwage insert already, is NJ-4-316 the same thing or am i fixin to order the wrong one

For replacement matching, NJ-4-316 is a -4 Female JIC insert in Eaton Aeroquip’s EverSwage line, made from 316 stainless steel. It also crosses to catalog number C1JB27, so if either NJ-4-316 or C1JB27 is what you’re replacing, you’re on the right part.
