these rated for anything past standard SAE pressure levels, or are they just built to meet spec?

They actually exceed standard SAE requirements on operating pressure, not just meet them. The FF5539-2020S is certified to SAE J514 but engineered to perform above what that standard calls for, so you've got some extra headroom if your system runs on the higher end.
