How important is it that I use these FN valves in a system that doesn't fluctuate pressure too much? I'm not real savvy with hydraulics but I can plumb anything.

These FN series flow control valves are best for applications where the load is relatively constant. They're not pressure-compensated, so big pressure swings will affect the flow.
