what fluids does this sensor work with, and are the wetted parts going to hold up to mineral oil long term?

Mineral oils meeting ISO 11158 are the rated compatible fluid for this sensor. The wetted internals are stainless steel, and the seals are FKM, which handles mineral oil well over extended use. If you're running something other than mineral oil, that falls outside the standard rating, though Webtec does note other fluids are available on request.
