what's the max pressure this sensor can handle, and does it stay accurate all the way up to that rating?

Rated to 1000 bar (14,500 psi), and accuracy holds at ±0.5% of full scale across that range. So at the top end you're looking at a potential variance of around 5 bar, which is well within acceptable limits for most hydraulic test and monitoring work. The stainless steel wetted parts and FKM seals are built to hold up at those pressures without degradation under normal mineral oil service.
