sensor's rated to 600 bar -- does that hold up running continuous duty or is that more of a peak figure?

Rated at 600 bar (8700 psi), that ceiling applies to continuous operation, not just momentary spikes. Pressure accuracy holds at ±0.5% of full scale across that range. Fluid temps up to 105°C are fine for sustained use, though ambient around the body should stay under 85°C. For most hydraulic test applications running mineral oil, you won't be pushing against any of those limits under normal conditions.
