what's the horsepower limit on one of these if I'm running a hydraulic pump off a standard 1800 RPM electric motor?

At 1800 RPM driving a hydraulic pump, the rating is 3.2 HP with a Buna-N spider and 5.0 HP with a urethane spider. Those numbers already account for a service factor of 1.5, so they reflect real working conditions rather than theoretical maximums. If your motor falls outside that speed, the rating will shift, but at 1800 RPM those are your numbers.

what's the temperature range on this thing if i'm running a urethane spider versus the buna-n? trying to figure out which setup makes more sense for where we're using it

Buna-N spiders are rated from -20°F up to 180°F, so they cover most standard shop and equipment room conditions just fine. Urethane spiders give you a wider cold-side range, starting at -80°F, with the same 180°F ceiling on the high end. If your application sees any kind of extreme cold, the urethane is the better call. For typical indoor pump and motor setups that don't get especially cold, either material will get the job done within that upper limit.
