Does the urethane spider hold up better in cold temps than the buna-n version? We run equipment in some pretty harsh conditions and need something that won't get brittle on us.

Urethane has a notably wider cold-side range than buna-n. The buna-n spider bottoms out at -20°F, while this urethane version is rated down to -80°F. Both top out at 180°F on the high end. If cold exposure is a real concern in your operation, the urethane is the stronger choice between the two materials.
