got a 10,000 psi setup. is this hose actually rated to run that all day or is that just burst pressure

For pressure ratings, this assembly is listed at 10,000 psi maximum operating pressure, with a 20,000 psi burst pressure rating. The 10,000 psi number is the one to use for normal running pressure.

hose says it's non-conductive, how does that actually work in practice, and is there a specific conductivity threshold it meets?

Polyurethane covering on this hose keeps leakage current below 50 microamperes, which falls within what SAE considers a safe conductivity level for electrical isolation applications. The covering is also non-perforated, so moisture can't work its way in and compromise that property over time. The orange color is intentional too, it's a visual indicator that the hose is rated non-conductive, which helps in environments where someone needs to identify it quickly.
