sensor puts out 4-20mA signal right? trying to figure out if it'll talk to our data acquisition panel without an extra converter in the loop

Correct, it outputs a 4-20 mA analog signal. That's a standard industrial loop signal, so most DAQ panels and PLCs with analog input cards will read it directly without any signal conditioning in between. Power supply needs to be somewhere between 8 and 30 V DC, so as long as your panel can source that, you should be able to wire it straight in.
