sensor's rated to 10,000 psi -- does that hold up running continuously or is that just a peak figure?

Rated max is 700 bar (10,000 psi), and that's the working pressure ceiling, not a momentary spike rating. Fluid temperature can run anywhere from -40 to 100°C without issue, and ambient temperature covers that same range. For continuous duty in a hydraulic system that stays within those limits, the stainless 316L body and FKM seals are built to handle it. Nothing in the specs restricts it to intermittent use.
