does this valve work for standard hydraulic lines runnin at 3000 psi, or is that pushin it too hard?

3000 PSI is right at the rated maximum for non-shock service, so as long as your system isn't throwing pressure spikes, you're well within spec. The steel body is built for hydraulic use at that pressure level. Just keep in mind the non-shock limitation. Surge or hammer conditions would put you outside what this valve is rated for.

What kind of systems would this steel check valve be good for? I'm running hydraulics, not pneumatics.

Being made of steel, this check valve is specifically designed for hydraulic systems. Brass valves are better suited for pneumatic and lower-pressure setups.
