How fine of an adjustment can you actually make on this thing? Like, is it touchy or can you dial it in pretty good?

Pretty solid control, actually. The color coding and numbered readout let you nail down repeatable settings within a small fraction of a turn, and each full turn corresponds to one color band. That makes it a lot easier to get back to a known setting if you ever need to back off and come back. Once you've got it where you want it, there's a set screw to lock it down so it doesn't drift.
