what's the coating on these fittings called, and does it actually hold up out in the field?

Dura-Kote is the plating used on these fittings. It's engineered specifically to fight off corrosion, which matters a lot when assemblies are exposed to moisture, grime, or other rough conditions on the job. The whole point of that coating is to stretch the working life of the hose assembly so you're not pulling things apart and replacing hardware more than you need to.
