Will this fitting hold up if I'm running hydraulic fluid through it, or is it just for air lines and stuff like that?

This Danfoss/Eaton coupling is designed to handle operating pressures above SAE standards. So yeah, hydraulic fluid should be just fine, assuming your system is within those limits.
