What’s the deal with the ports on this thing? Are they all NPT, or can I get it with JIC fittings?

Standard ports are 1 NPT, but SAE straight thread and male JIC 37° flare ports are optional.

what's the max flow rate this cooler can handle before it starts losing efficiency? running a pretty high-demand hydraulic circuit and dont want to undersize it

Oil flow capacity tops out at 100 GPM on this unit, so for most mobile hydraulic setups that's plenty of headroom. Heat removal peaks at 90,000 BTU/Hr, which lines up well with higher-flow circuits running under sustained load. As long as your system stays within those numbers, you shouldn't run into thermal issues from undersizing.
