what's the difference between the stainless version and the monel one, and how do I even tell which one I got?

Two notches on the hex means you've got the stainless model, which is what this fitting is. The body is type 303 stainless steel, the ball is type 440 stainless steel, and the spring is type 302 stainless steel. Monel models are marked with one notch and carry a -B at the end of the part number. Stainless models use -S. If corrosion resistance is the main concern and you're not dealing with a specific chemical environment that calls for monel, the stainless version handles most harsh industrial conditions just fine.
