got a small single-acting setup i don’t run every day. is the P39 the basic one-speed pump or is it two-stage?

Single-speed operation is the point of the P39. In the Ultima Steel hand pump line, it is the exception to the two-stage models, so it is aimed at low-cycle, basic jobs.

how much oil does this pump hold, and is 41 cubic inches gonna be enough for running a single cylinder setup?

For a single-acting cylinder on a straightforward job, 41 in3 of usable oil is generally workable. That said, if you're hooking up multiple cylinders or need extended stroke length, you'd want to look at higher-capacity models in the Ultima Steel series, which go up to 453 in3. The P39 is built more for low-cycle, basic applications where you're not pushing a ton of oil volume per job.
