trying to cut down on handle strokes. is this P77 one of them two speed pumps that shifts on its own?

On the P77 you get a 2 stage hand pump that automatically switches from the high flow first stage to the low flow, high pressure second stage. That setup is meant to move a cylinder up to load contact quicker, then build pressure, and it can reduce handle strokes by as much as 78 percent versus a single speed pump.

how much oil does this pump hold, and is 41 cubic inches gonna be enough to run more than one cylinder at a time?

At 41 in3 of usable oil, it sits on the smaller end of the P-Series range. Running multiple cylinders is possible, but the total oil demand of your cylinders combined needs to stay within that capacity. If you're moving larger bores or need extended stroke travel across several cylinders, you'd likely want to step up to a higher-capacity model in the same series. For single-cylinder work or lighter multi-cylinder setups with modest oil demand, 41 in3 gets the job done fine.
