Trying to speed things up, does this hand pump shift on its own from fast advance to high pressure?

For moving a cylinder out to the work quick and then building pressure, the two stage setup is made to do exactly that. It runs high flow in the first stage, then automatically switches to the second stage for low flow at high pressure up to 10,000 psi.

How much oil does this pump hold, and is 250 cubic inches gonna be enough to run more than one cylinder at a time?

At 250 in3 of usable oil, you've got a solid capacity for multi-cylinder setups. The P801 is built to handle multiple cylinder hook-ups, so running more than one isn't outside what it's rated for. Whether that capacity fits your exact setup depends on the combined displacement of the cylinders you're using, but 250 cubic inches gives you meaningful working volume to operate with.
