reckon this ps series switch can handle pressures up around 2500 psi or so without issues

It adjusts between 500 and 3000 PSI, so yeah, 2500 falls right in that range, and the reset differential runs from 50 to 150 PSI to keep things stable.

what's the reset pressure differential on this thing, can't quite tell from the specs

Reset pressure differential runs between 50 and 150 PSI on this PS series switch. Once it trips at your set pressure somewhere in that 500-3000 PSI range, the pressure has to drop by that 50-150 PSI amount before the switch resets and allows the system to build pressure again.
