got an 8mm metric tube here, does this elbow just push on or do i need tools to make it seal up

Push the tubing straight into the fitting to connect, and it seals with a Buna-N O-ring. When you need to pull it back off, you just press the collet ring to release the tube, so no tools are needed for normal assembly or disassembly.

Will this fitting hold up okay in a hydraulic system, or is it more for like, air lines?

fitting says it works with BSPP and BSPT both, how does that even work, aren't those two different thread types?

BSPP and BSPT share the same thread pitch and tooth profile, so the physical thread form is close enough that a single male fitting can engage with either port type. The difference between the two is that BSPT threads taper slightly for a mechanical seal, while BSPP threads are parallel and rely on a face seal or O-ring. On this fitting, the Buna-N O-ring handles the sealing duty, which is what makes it functional across both thread standards without needing separate versions for each.
