got a spool that won’t seat in my valve body, is this the kind of adapter that bridges that mismatch?

these are aluminum, so are they gonna hold up alright in a wet or greasy shop environment, or is that gonna be a problem?

Corrosion resistance is one of the practical benefits of aluminum in hydraulic applications, so a greasy or moisture-heavy shop environment is generally not a concern for these adapters. They're not going to rust out on you the way a steel part might in similar conditions. That said, keeping fittings and connection points clean during installation is always good practice regardless of material.
