Both the bayonet and pipe thread versions come up when I search this part. Are those two separate adapters, or is this one unit that handles both connection types?

Those are two distinct adapter configurations available under this product line. The bayonet adaptor threads into the breather element and seals with an o-ring on one end, then connects to the mounting flange of a standard filler-breather on the other. The pipe thread version works the same way on the breather element side but threads into a pipe thread coupling instead. Which one you need depends on how your reservoir mounting is set up.

got a standard filler-breather flange on my tank. is this adapter what i need to run a Vickers spin-on or DIRT-Gate element?

For a standard filler-breather setup, this adapter is meant to bridge the breather element to the mounting flange. The bayonet style has one end that threads into the breather element and seals with an o-ring, and the other end connects to the mounting flange of a standard filler-breather.
