For bending and flaring work, it’s SAE J524 seamless low carbon steel tubing that’s annealed for that purpose.

what's the burst pressure on this 3/4 inch tubing and how much should I actually be running it at day to day?

Burst pressure on this tubing comes out to 13,933 psi based on the SAE J1065 Barlow formula. For everyday working pressure, the rated max is 2,322 psi. That's calculated using a 6:1 safety factor, which is the standard recommendation when hydraulic shock and mechanical strain are present at a considerable level. If your system sees severe shock or strain, you'd want to work even lower than that rated number since an 8:1 factor would apply in those conditions.
